Scuola Is In Session At 312 Chicago

Scuola is back in session at 312 Chicago, the upscale Italian ristorante where you can do more than savor some primo bistecca before adjourning to neighboring Cadillac Palace for some tightly choreographed histrionics. For starters, you can take some notes, because Chef Luca Corazzina, a native northern Italian, is here to teach you why cooking old school never goes out of style.

This Saturday, Dec. 1 from noon to 2 p.m., he’ll help get the holiday parties started with classic treats (and some homemade limoncello). The lessons—and the eating—only continue from there. On January 12, gather round the table to learn how to make pasta like mama likely never did. And on February 9, you’ll prep for Carnevale di Venezia, when the masks come on and the inhibitions come off, learning what Venetians like to eat when they go in cognito. Finally, on March 9 it’s time to explore the art of fish à la Italiano.
