Try Scofflaw And North Shore Distillery's Collaborative Gin Tomorrow

A cocktail at Scofflaw.
The gin is an Old Tom gin, which is sweeter and rounder than the London Dry gin you're probably used to. Time Out Chicago reports that the gin is 90 proof, which is higher than many gins, so it will work better in cocktails.
North Shore's Sonja Kassebaum and Scofflaw head bartender Danny Shapiro made the gin with botanicals including juniper, cardamom, coriander, and cinnamon, but Shapiro says that the most important botanical is osthmanthus blossoms, a tea that provides floral notes.
The gin is available starting at 5 p.m. Sunday and you can get it as a shot for $6, in a Tom Collins or Martinez cocktail for $8, or, what the hell, take home a whole bottle for $35.
