Watch How The Publican's Pork Rillettes Are Made

We have archives and had to dig deep into them to remember what we wrote about the Publican’s pork rillettes in 2008.

Those rillettes are one of our favorite dishes in Chicago and have proven to be such a mainstay of the Publican’s menu fans of the dish would freak out if it was replaced. That’s essentially what chef Brian Huston said in this video from photographer and video journalist Simon Brubaker that shows how the rillettes are made.
