Fun With Desserts: Paczki From Flo & Santos

Chicago, as we know, is a town of 24-hour pączki people but, until Saturday night, I’ve never come face-to-face with pączki holes.

Let’s get that out of the way first. South Loop pizzeria Flo & Santos does a lot of things right. Pizza, for starters. Their pork wings will make you believe pigs can fly. Their Polish sampler platter contains one of a giant Polish sausage, a potato pancake and some amazing pierogi.

But does their pączki really qualify as such? I say no, based on the simple fact that pączki should be stuffed with some type of filling, be it fruit, chocolate or some pudding and dusted with powdered sugar. Flo & Santos does dust their pączki with sugar, but of the granulated variety, not powdered.

But they are beauties worth staring at for a few moments before taking a fork to them and running them through the bed of chocolate and peanut butter sauces. The dough is light and moist on the inside and the sauces cling to them like a lover.

One man’s pączki is another man’s doughnut holes. Whatever it’s called, Flo & Santos’ is doing this right.
