Every year, the crazed festival of pork that is Cochon 555 tours the nation. Five chefs take five heritage pigs and break them down into competitive dishes and five winemakers come up with pairings. The winner is crowned prince or princess of pork, the guests stuff their faces and everyone leaves happy. Cochon 555's stop in Chicago is tonight, and tickets are still available.

This year, the chefs competing include Kevin Hickey (Allium), Cosmo Goss (Publican Quality Meats), Matthias Merges (Yusho), Ryan Poli (Tavernita) and Joshua Adams (June). Rob Levitt from The Butcher & Larder will be running a butchering demonstration. The whole shebang takes over the Four Seasons from 5 p.m. until the pork runs out.

Tickets for the event itself are available online and cost $125. If you want early access and treats like unlimited oysters, a gift bag and a bourbon-punch cocktail competition, grab a VIP ticket for $200.

If you need more enticement, check out our recap of the event from last year.
