Check Out The Menu At CH Distillery, Opening Next Week

CH Distillery, the newest addition to the West Loop's bustling restaurant district, opens next Tuesday. The bar/restaurant will be making its own spirits on-site, mixing up some interesting cocktails and serving a menu of small plates and bites that pair well with strong booze.
Cocktail bars are becoming a dime a dozen in Chicago, but CH Distillery is the first cocktail bar to distill its own spirits on-site. They'll be making all kinds of interesting stuff for mixer Kyle Davidson to use in cocktails, including a "Key Gin" made with lime, a serrano chili vodka, their own ginger beer and orange curacao for mixing. This might be the only bar in Chicago where we would actually order a drink like "The Tradition," a shot of ice cold homemade vodka served with rye bread and a side of pickles. Booze purists will be satisfied - rather than trucking in pre-made distillate, the distillery is milling its own grain and distilling everything themselves. Some of the spent grain will even show up on the menu.
The food selection, consisting of small plates from $7-18, is simple and classic. They'll have shrimp cocktail, gravlax, rare roast beef and whitefish spread - in other words, exactly what you want to eat while concentrating on strong spirits. If you're in the mood, they offer caviar service for $55/ounce. In addition, they'll be featuring an extensive cheese and charcuterie selection.
