Trenchermen, Perennial Artisan Ales Team Up For 'A Dinner Upriver'

St. Louis-based Perennial Artisan Ales has quickly established itself as one of the preferred out-of-state breweries by Chicago’s craft beer enthusiasts. The brews Phil Wymore and company are making serve as excellent complements to an array of foods.
This should serve as a nice segue to let you know about an upcoming beer dinner starting 6:30 p.m. Aug. 27 at The Trenchermen. Chef Patrick Sheerin has invited Paul Virant (Vie, Perennial Virant) and St. Louis chefs Gerard Craft and Kevin Nashan for what they're calling "A Dinner Upriver."
Nashan and Craft were nominated by the James Beard Foundation as finalists for Best Chef: Midwest this year and bring serious skills to the kitchen. Each chef will prepare one course, with Trenchermen handling two. Each will also prepare a dish to be passed during a welcome reception to start the night.
The bar will also have the Perennial beers from the dinner on tap that night to go with a beer themed bar food menu, again available on this night only—this will be open to the public, separate from the dinner itself, until close.

Kevin Nashan:
Beer: Peach Berliner Weisse (Berliner Weisse brewed with local peaches)
Dish: BBQ curry cornish hen
Gerard Craft:
Beer: Woodside Honey Tripel (Tripel brewed with MO Woodside Honey)
Dish: Pulled pork shoulder, caramelized peaches, corn puree, globe basil, cracklins, smoked trout broth
Paul Virant:
Beer: Trenchermen Marzenbier (w/ Persimmons)
Dish: "Little bloom on the prairie" en croute Pumpkin butter, toasted beer bread, arugula, candied spiced pine nuts
Pat Sheerin (2 courses):
Beer: (to be revealed at the dinner)
Dish: Snail agnolotti, cedar dashi, three sisters pecans

Dish: Belgian waffle, quark, and going to finish up details soon regarding the pairing.
