Dark Matter Coffee Serves Up Bourbon Barrel-Aged Coffee

Dark Matter Coffee just brewed up a coffee aged in bourbon barrels, and we want this in our face, post-haste. Tasting Table Chicago talked to the innovative, mixtape-making bean brewers, and this how it all goes down:

Dark Matter's current batch of green beans is spending a week in Heaven Hill bourbon barrels. Once roasted and brewed, the time in oak manifests as mellowed acidity, heightened vanilla and caramel notes, and a burst of grape soda on the nose.


Tasting Table Chicago also describes a bottle of the stuff that they brought home, and, fair warning, reading it will basically make you into Homer Simpson lusting after a donut. More barrels will come, including whiskey barrels from Koval. Sweet. Tasting Table Chicago says you can buy it at either the Dark Matter Coffee roasting works or at Star Lounge. Hop to it.
