Uncommon Ground Plans To Brew Beer

Chicago’s craft beer scene will not end before the entire city is knee-deep in suds. Crain’s Chicago Business reports the newest player to enter the market is Uncommon Ground, the ever popular restaurant and coffeehouse with a stellar reputation for walking the walk when it comes to sustainability and being green.
Uncommon Ground is building out a 1,200 square-foot space next to its Wrigleyville outpost into a seven barrel brewhouse with fermentation tanks and serving tanks that will feed beer directly into the restaurant’s beer lines. Owner Michael Cameron told reporter Ari Bendersky he always wanted a brewpub component to the restaurant but “never really had anywhere to do it, the space or the money.”
Until now.
Cameron and Uncommon Ground’s Wrigleyville bar manager, Jim Cozzens, will start with a flagship American Pale Ale and will offer seasonal ales as their food menu rotates. Keeping with Uncommon Ground’s sustainable philosophy, they’re going to use brewing ingredients from certified organic farms and are even working on organic hops.
Uncommon Ground calls their beer operation Greenstar Brewing and expects to be serving their first brews in December.
