Grant Achatz Chats With Harper's Bazaar, Will Always Love Pizza

Harper’s Bazaar chose Grant Achatz for their most recent "Fashionable Food" spotlight, which included some brief questions along with some of Achatz’s favorite product picks. When asked how he felt about being seen as the “King of Molecular Gastronomy in the U.S.,” Achatz response was very direct: “I hate that. It seems very soulless.” He went on to point out that “We prioritize science, but we use it as a tool to manipulate food so that we can convey emotion.” Anyone that has had the privilege and pleasure of tasting Achatz’s food knows that emotion and memory play a huge personal part in everything he creates. Good on him for reminding Harper’s Bazaar of the deeper more important part of his work.
