If you haven't gotten a chance to check out West Loop Salumi, you're missing out. But they're only open a couple of hours on the weekends, and their products sell incredibly fast. Luckily Provenance Food and Wine is here to rescue you. From 7 p.m. until 9 p.m. tonight, they are hosting a tasting with West Loop Salumi at The Grafton featuring their meat products, plus beers and cheese.

For just $30, you get to taste:

Meats: West Loop Salumi's Finnocchiona, Barolo & Bresaola
Cheeses: Jacob & Brichford Arabella, Cabot Clothbound Cheddar, Carr Valley 6 Year Cheddar & Hook's Blue;
Beer/Cider: Virtue Cider's Sidre di Nava, Darkhorse Brewery's Boffo Brown, Foret Saison and Greenbush Brewery's Brother Benjamin

We've been to one of these classes before—they'll teach you all about pairings, you'll get to talk to producers and vendors and, if you're lucky, there will be some left for sale at the end. Sign up now.

The Grafton is located at 4350 N. Lincoln Ave.
