Photos: Butchering Tips From The Butcher And Larder's Rob Levitt

Earlier in the week, we visited Sepia in the West Loop for a tasting of The Glenlivet 18-year and 21-year scotch and watched as The Butcher & Larder owner Rob Levitt took apart half of a swine piece by piece. We also got to munch on some scotch pairings, little bites made with Levitt's meat. The highlights of the evening were what we learned from Levitt about the masculine yet elegant craft of butchering.
