Lobster Roll Specialist Luke's Lobster Is Coming To Chicago

Lobster rolls, that summertime New England mainstay, are getting a big boost in Chicago: New York City-based Luke's Lobster is opening next Monday, May 18. Vice president Ben Conniff said, "We're incredibly excited to be opening shop in the Loop at 134 North LaSalle."

Considered possibly the best lobster roll in NYC, the mini-empire was founded by Maine native Luke Holden, who was horrified that lobster rolls "drowning in mayo and diluted with celery" were being sold for $30. So he and his father used their relationships with lobstermen to directly obtain quality lobster meat for an authentic style lobster roll: Chunks and chunks of lobster claw meat in a toasted and buttered split-top bun.

Besides lobster rolls, Luke's Lobster serves crab rolls, shrimp rolls, New England clam chowder and lobster bisque. Stay tuned for more details about its menu.
