Gone but not forgotten, Chef Charlie Trotter and his legacy live on throughout the city of Chicago. Not only through the work done by The Trotter Project, the non-profit that continues Trotter's passion for mentoring the future minds of the culinary world, but also on plates across our city made by chefs who spent time learning from Trotter at his eponymous restaurant or interacting with him in the culinary world.

Some fellow chefs will be teaming up tomorrow night with Table8 at Taus Authentic to host a benefit dinner and silent auction to help The Trotter Project continue the vision that Chef Trotter started during his own career. The collaborative multi-course meal will feature dishes from the likes of Executive Chef Jimmy Papadopoulos of Bohemian House, Executive Chef Michael Kornick of mk, Executive Chef Chris Anderson of Moto and Chef Michael Taus of Taus Authentic.

Besides a dinner showcasing the cuisine of some local chefs who we truly enjoy, the silent auction includes a pretty sweet roster of gifts you can bid on. Standouts include numerous dinner and drink options from a who's who of Chicago restaurants, including Girl and the Goat, Momotaro, Perennial Virant, mfk, Balena and the participating chef's restaurants.

The Table8 Trotter Project Benefit dinner is tomorrow night, Monday July 13 at Taus Authentic (1846 W. Division St.) from 7 to 9 p.m. Tickets for the benefit are $135, which includes the seated dinner, tax and gratuity. Alcohol will be available to purchase separately. For more information and to purchase tickets, head over to Table8's website.
