Dollop Coffee Company will open a Ukrainian Village cafe, Dollop Bake Shop, on Friday. This new location will serve house-made croissants and baked goods along with coffee.

Located at the corner of Damen and Augusta, this Dollop will be headed by chef Axel Erkenswick (previously of acclaimed Rogers Park pastry shop Smack Dab). Erkenswick will oversee not just pastries, but also a fresh, seasonal lunch menu of soups, salads and sandwiches.

Like the six existing Dollop locations, the shop will serve Metropolis Coffee and pies from Hoosier Mama.

Come September, this Ukrainian Village Dollop is slated to be just one of four new Chicago locations for the company, too.

Dollop, which opened its flagship coffee shop in Uptown in 2005, also plans to open a Hyde Park location this year at 55th and University, and two locations in the Loop: one at 55 W. Monroe, the other at 225 W. Washington.
