Acclaimed Chef Paul Virant Is Leaving Perennial Virant

Celebrated chef and noted canning/preserving evangelist Paul Virant is exiting his only Chicago-proper location, Perennial Virant, in Lincoln Park, according to Boka Restaurant Group. The restaurant will shutter for several months after New Years’ Eve in order to chart a new concept.

Virant will still serve his acclaimed dishes at his two suburban spots, the formerly Michelin-starred farm-to-table favorite Vie, in Western Springs, and the more casual, American fare-focused Vistro, in Hinsdale. You’ll just have to schlep a bit further than Lincoln Park.

Boka will bring in local Ryan See (Compass Bar, Bridge House Tavern) and New York-based Dan Warren to help reshape what was formerly known just as Perennial—and just might be again.
