We were pretty ecstatic to learn in April that Chef Jason Vincent and the team behind the outstanding Giant would be opening up a new restaurant in the upcoming Ace Hotel. It turns out the wait is all but over: City Mouse, as the new venture has been dubbed, will open on Saturday, July 1.

City Mouse is starting out with just brunch, seven days a week, when it opens next week before eventually expanding to all-day service, with, according to the Tribune, a July 12 target. The menu will feature "seasonal fare inspired by the Midwest." (The Trib chatted with the principles and gleaned a few more menu details, which includes an egg-jelly-hashbrown muffin sandwich and griddle cakes with pork shoulder.) Reservations for City Mouse are now available.

It turns out July 1 is big day all around for Ace Hotel Chicago. That's the day that reservations for the hotel itself will be available, too. (It opens on September 1.) So you can grab some highly anticipated brunch and book yourself a seemingly swank staycation spot at once if you like.
