Grant Achatz's Roister Is Serving Brunch Starting This Saturday

Roister—a Grant Achatz-empire restaurant that largely eschews molecular gastronomy in favor of just really good, hearty New American dishes with a casual vibe and wonderfully all-over-the-map music—remains a favorite. So were happy to see this week that the bustling West Loop spot will soon be open for brunch hours as well.

The new hours start this Saturday morning. They'll be open at 10 a.m. on Saturday and Sundays from there out. Roister said in an email:

"We’re Brunching—You read it right. Roister will begin serving weekend brunch at 10 am on Sept. 23. Because let’s face it: the brunchers are alive and well in the West Loop, and frankly, there’s no better place to sip an AM cocktail while devouring perfect fried chicken and waffles. Reservations are now available through the end of November on Tock. Walk-ins are always welcome."

Walk-ins are allowed, if there's room. They don't appear to have a brunch menu live, but we did notice a stream of offerings being uploaded onto their Instagram page, including chicken and waffles (we can heartily vouch for their fried chicken) and an open-faced egg sandwich with bacon, cheese sauce, peppers and chips.
