Watch Chefs At Moto Deconstruct, Then Reconstruct, An Avocado

When you make guacamole, you mix all of the ingredients together in a bowl, right? Well, clearly you aren't a molecular gastonomist. The wizards at moto are about to debut a new menu (with Chef Homaro Cantu himself cooking on the line) and released this video about how they deal with avocados. It's an exercise in post-modern food amazingness.

They don't just mix all of the ingredients together - they deconstruct, then reassemble an avocado out of ... OTHER avocados! Plus, chocolate, tomatoes and other savory ingredients. Then, after all of that work, they mush the reconstructed avocado in a molcajete to create the faux guacamole. And that's just a tiny part of the dish.

It's worth watching, if only for the mind trip. Oh, and it's beautiful and has a jaunty latin theme.
